St. Louis is a town with plenty of good food. Our unique culinary traditions have always drawn from the diverse farming community around us – and now, as more and more of us want to see a more sustainable restaurant industry in our town, diners can dine green with confidence when they see a “GDA-certified” sticker on their favorite restaurant’s window.
The Green Dining Alliance (GDA), a non-profit program of St. Louis Earth Day, certifies restaurants in sustainability and helps business owners conserve energy, reduce waste, and source locally. GDA works hand in hand with local restaurants of all types to reduce their impact and adopt sustainable initiatives. They make greening easy with facilitation, education, and tools to navigate smoothly through the ever-changing sustainability movement.
And it’s growing. As of September 2014, the GDA has tripled its number of certified restaurants since this time last year, with 41 restaurant members and 539 metric tons of recyclable waste diverted from landfills in 2013 alone. GDA also collaborated with Maplewood’s Special Business District to create a “Green Dining District” on the Manchester strip, promoting a walkable dining destination in which at least 25% of the restaurants are certified green.
The GDA’s restaurant certification program approaches sustainability holistically by auditing a restaurant’s facility and practices, taking into account:
- Recycling and waste reduction
- Local sourcing
- Water and energy conservation
- Chemical usage
- Innovation
- Education and awareness

At PuraVegan, our commitment to preserving planetary resources is demonstrated through our menu, packaging and best practices. According to “Diet for a New America” it takes 8,500 gallons of water to produce a pound of beef, but only twenty-five gallons to produce a pound of wheat. Plant heavy diets are a most efficient use of water and land, while causing less pollution. We take recycling a step further and encourage REUSE, which is even more effective. Juice subscriptions and cleanse drinks come in reusable mason jars, with store credit given upon return. We offer our customers glass straws for purchase and our food delivery is done via bicycle.

Schlafly is proud to be seen as a leader in sustainability among local businesses. First of all, we took two abandoned buildings and put them back into use as the Schlafly Tap Room and Schlafly Bottleworks. We purchase a large amount of locally-produced food and even grow some ourselves in the Schlafly Gardenworks for our restaurants, and host a weekly Farmers Market. We’ve received grants for a pilot composting project for post-consumer food waste at both restaurants. We are a charter supporter of Amerens Pure Power renewable energy program and use ultra high efficiency heating, ventilation and air-conditioning units.
